How about creating something a little different for all your friends and family who drop over during the holidays? These darling mini gingerbread houses are designed to sit comfortably on the brim of a mug. Such a yummy treat and very impressive as well. This will certainly bring a smile to your family and friends as you serve them coffee, hot chocolate, or my favorite Chi tea. These adorable mini gingerbread houses were created by Andrew Salomone. INGREDIENTS
- 4 cups flour
- 1 2/3 cup honey
- 1 cup sugar
- 1 cup margarine or butter
- 1 egg
- 1 teaspoon baking soda
- 1 package gingerbread spices
DIRECTIONS
Mix flour with dry ingredients. In a pan heat honey, sugar, and gingerbread spice until the mixture will be come a liquid. Set to the side until it cools slightly. Pour warm honey into the flour, then add butter (in cubes) and your egg. Mix thoroughly with a spoon and then knead with your hands. Knead until you created a smooth dough. Shape into a ball and wrap in plastic wrap. Put the dough into the refrigerator for 5 to 10 minutes.
When the dough has cooled remove from the refrigerator, divide in half, and re-wrap one part. Take your other part and roll with a little bit of flour until it is 1/4 inch thick and cut out all needed shapes of the template provided below. Do the same with the second part of your dough.
Preheat your oven to 176 F or 80 C. Place the gingerbread houses on a flat baking pan lined with baking paper or a silicone mat keeping the distance between each.
Bake the gingerbread houses 4 – 5 minutes. They should be slightly gold. The darker the color, the harder your cookies will be.
Building The Houses
Glue together the house pieces with icing. Set to the side for a few hours to dry, then decorate with frosting and your choice of sprinkles, candy, etc.
Keep in a tightly closed container to keep soft until ready to serve.
