I can’t get over how cute these are!! Coffee cake filled with coffee whipped cream, topped with coffee vanilla buttercream and caramel drizzle. Yum!
– coffee cupcakes from Leite’s Culinaria or make your own
– whipped cream (whip up 1C of whipping cream and add icing sugar and vanilla to taste. dissolve 1 tsp of instant coffee in 1 tsp of hot water and whip into the cream. The filling doesn’t need to be very sweet at all, it’s a nice contrast to the frosting)
– coffee buttercream (add 2-3 tsp of concentrated coffee in your favourite buttercream recipe)
– caramel drizzle (not “real” caramel but it’s a lot faster/easier than the traditional caramel)
To assemble, core your cooled cupcakes with a paring knife or a cupcake corer. Fill with whipped cream and add a spiral of caramel on top. Pipe your buttercream on and generously drizzle caramel all over. Finally cut up green straws into 3” lengths and point them in at an angle.
