I don’t know about you, but I love chocolate chip ice cream, and do you know what is even better? Sandwiching a big fat scoop of that ice cream between two big, fat, chewy chocolate cookies! You will get a double-dose of cold, creamy, chocolaty minty goodness.
I have to admit that while making them it was mighty tempting to gobble them down on the spot! I managed to resist because in the end I was richly rewarded since they are actually better after a couple of days in the freezer. These make a perfect treat on a very hot summer day.
